The meat-and-rice dish called jambalaya is famous in America. No one knows for sure where it came from, though. One common story is that jambalaya started when Spanish people first arrived in what would become the US state of Louisiana. In Europe, the Spanish had a rice and fish dish made with saffron, a special seasoning. Saffron was hard to get in Louisiana, though. So, the Spanish had to make their dish a different way.
The Spanish used rice and seasonings brought to Louisiana by people from West Africa. They also used tomatoes and hot red pepper, which were first grown by Native Americans. Other groups of people in Louisiana added new ingredients to the dish as well. French people added onions, bell peppers and celery. Creole cooks added their own special seasonings to the dish. And Cajuns took out the tomatoes and added sausages instead. All these changes helped shape jambalaya into the delicious dish it is today.
